Date, Orange and Coconut Sugar Scones
Who said healthy doesn't taste good?
300g dates
400g plain flour
3 tsp baking powder
35g coconut sugar
Zest of 1 orange
Flesh of 1 orange, 1cm dice
100g chilled butter
160g plain yoghurt
Preheat the oven to 190 fan bake. Line a baking tray with baking paper.
Place the dates in a bowl and cover with boiling water to soften. Set aside.
Place the flour in a bowl with the baking powder, coconut sugar and zest. Grate the butter and rub into the flour mixture withy our fingertips until it resembles fine breadcrumbs.
Drain the dates, squeezing out the water. Add the dates and the diced orange to the flour mixture and stir to combine. Add the yoghurt and mix until it forms a dough. Add more yoghurt if it is too crumbly but try not to overwork the mixture.
Tip onto your bench and shape into a circle about 2cm high. Cut into 6-7wedges.
Place on the baking tray, brush the tops with milk and sprinkle with more coconut sugar.
Bake approx. 15 minutes, or until golden and cooked. Best eaten the day they are made.
