Forgotten Fruit Muffins

Muffins

1 egg

½ cup neutral flavoured oil (a vegetable oil or light olive oil)

1 tsp vanilla

1 cup yoghurt (any flavour will work)

1 cup chopped fruit

2 cups self raising flour

½ cup sugar

 

Muffin topping

1 pinch brown sugar (enough for each muffin)

1 pinch rolled oats (enough for each muffin)

chopped walnuts (optional)

 

METHOD

Preheat your oven to 180 degrees fanbake.

Place all the wet ingredients into a large bowl and mix.

Add the fruit.

Add the dry ingredients to the mixing bowl and gently combine.

Spoon equal amounts into muffin casings or a muffin tray.

Sprinkle equal amounts of brown sugar, rolled oats and chopped walnuts (optional) on each muffin.

Place in the oven and cook for 25-30 minutes.
