Hazelnut Cake
Very nice cake, not too sweet. If you don't have ground hazelnut, grind whole ones in your food processor, the texture will be great!
Ingredients
125g butter, softened
200g caster sugar
1 pinch of salt
4 egg yolks
150g dark chocolate
50g whole hazelnuts
200g ground hazelnuts
120g flour
2 tsp baking powder
4 egg whites
1 pinch of salt
Method
Preheat oven at 180C
Beat butter, sugar, salt and yolks until well combined.
Chopped the dark chocolate (I just broke the drops in half as I like big chunks of chocolate in my cake) and add to your first mixture with whole hazelnuts, ground hazelnuts, flour and baking powder. Mix together.
Meanwhile, beat the egg whites and salt until firm and fluffy, then gently incorporate with a spatula to your previous mixture.
Line a cake tin with baking paper, add your batter and smooth the top with your spatula.
Bake for about 50 minutes.
Take out of the oven, leave in your tin for 10 minutes then transfer onto a cooling rack.
Best enjoyed slightly warm!
