
Quiche Lorraine
Quiche Lorraine is one of the most famous dishes in France and around the world.
Quiche Lorraine – 6 people
Ingredients:
Shortcrust pastry (homemade or storebought)
4 eggs
200g lardons (can be replaced by chopped bacon, diced pancetta or ham)
200ml crème fraiche or pouring cream
200ml milk
1 pinch ground nutmeg
Salt & pepper
Instructions:
Preheat your oven 180C / fan bake.
Line your tart tray/pan with the pastry and prick it all over with a fork.
Brown the lardon in a pan (step not needed if using ham). Drain off the excess fat.
In a mixing bowl, whisk together the eggs, cream, and milk. Add salt, pepper, and a pinch of nutmeg. Finally, add the cooked lardons. Mix well and pour the mixture into the tart shell.
Bake the quiche in the oven for 50 minutes.
Serve with a fresh green salad.
This is the classic recipe with the lardons, but you can adapt the recipe to suit your taste buds, your fridge left overs or your diet requirement:
- make it vegetarian with cheese (Emmental, Comte to keep it French, but blue cheese would be nice too – I sometime do steamed broccoli and camembert).
- Spinach and feta
- Add any leftover cooked veggies you have, any herbs you fancy, the possibilities are endless!
