
Seeded Dark Chocolate Bark
A crunchy seedy slice, packed with seeds and creamy tahini.
Ingredients:
200g pumpkin seeds
175g sunflower seeds
175g linseed
50g sesame seeds
50g coconut chips
4 Tbsp honey or maple syrup
2 Tbsp melted coconut oil
2 Tbsp tahini or nut butter
150g melted dark chocolate
Method:
Preheat your oven at 170C.
Mix all the seeds together in a bowl, add the honey, tahini and coconut oil, mix thoroughly.
Spread the seeds mixture evenly into a tray lined with baking paper.
Bake for about20 minutes until golden brown.
Take out of the oven and let cool down.
Spread the melted chocolate over the top and place in the fridge until set.
Cut into pieces and keep in the fridge.
Optional:
- Use milk chocolate instead of dark chocolate
- Sprinkle the melted chocolate with flakey sea salt
- Swap seeds with what you have available in your pantry
- Use wholegrain oats instead of the coconut chips
- Add 50g of dried cranberry / goji berry / sour cherry to the seed mix
