
Spinach and Goat Cheese Quiche
A classic goat cheese and spinach tart, simple, yet delicious! An easy meal to share with friends or for weeknight dinner.
Spinach and goat cheese quiche – Serves 6
For the pastry:
200g flour
Pinch of salt
90g cold butter, diced
1 egg
1 Tbsp cold water
Method:
Mix flour and salt in a bowl, add the butter and mix with your fingers (you’re aiming a crumby consistency)
Add the egg and cold water, mix until you form a non-sticky dough ball (you can add more flour if too sticky).
Cover and place in the fridge for 30min.
2 onions
400g frozen spinach
½ tsp dried thyme
3 eggs
200ml pouring cream
Pinch of ground nutmeg
180g fresh goat (goat log is best)
Method:
Slice the onions and cook them in oil on medium heat for about 10 minutes, then add the frozen spinach and thyme.
Cover and cook for about 20 minutes.
In a bowl, mix eggs, cream, salt and pepper and a pinch of ground nutmeg.
Crumble half of the goat cheese and add to the egg/cream mix. Then add the onions and spinach to the mix.
Roll out the pastry and place in a tart/quiche tin.
Pour the mix and crumble the rest of the goat cheese on top (or slices of cheese if you used a log).
Bake in a pre-heated oven at 190C for about 40 minutes.
