Zaatar Tahini Cucumber Salad

Fresh and crunchy; a very tasty way to eat cucumber!

For the pita chips:

Torn pita bread

Lots of extra virgin olive oil

Salt

Aleppo pepper (optional)

 

Toss together, thoroughly coating the pita pieces with olive oil.

Bake at 200C for 5-10 minutes until golden brown. Keep a close eye on them as they can burn quickly (especially if using thin ones).

 

For the dressing:

1/3 cup of tahini

1 Tbsp extra virgin olive oil

Juice of 1 or 2 lemons

2 Tbsp zaatar

1 garlic clove, grated

Salt and pepper

Cold water to thin

 

Whisk ingredients together, starting with the juice of 1 lemon and about ¼ cup of cold water and work your way up depending on how zesty you like your dressing and how thin you want it.

 

Assembling:

2-3 large cucumbers, thinly sliced (best using a mandolin)

¼ red onion, sliced

½ cup fresh coriander, chopped

 

Put everything on a bug plate or in a salad bowl, toss together and enjoy!
