Polselli Flour Classica Tipo 00 Italian is a mixture of flours obtained by grinding selected tender domestic and foreign grains. Specially accredited for having the necessary characteristics for true Neapolitan pizza, this flour has excellent resistance to high temperatures and can be used to make wood oven pizzas. Polselli has its roots in the small workshops of Neapolitan master pizza makers in the first half of the twentieth century. Over the years, it has grown from a small artisan business to a leading protagonist in Italy’s fiercely competitive milling industry.
