Spinach, Feta and Sundried Tomato & Olive Relish Scones

Flaky layers of cheese scone dough stuffed full of our delicious sundried tomato and olive relish, spinach and feta. These are cheese scones taken up a level!

Spinach, Feta and Sundried Tomato & Olive Relish Scones – Serves 7-8

500g flour

3 tsp baking powder

½ tsp salt

Pinch of cayenne pepper or smoked paprika

120g butter, grated

2 cups grated cheese, plus ½ cup extra to sprinkle

250ml milk

1 egg

2 Tbsp Ottimo Sundried Tomato & Olive Relish

60g baby spinach

100g feta

1 egg yolk

 

Method:

Pre-heat your oven at 190C, fan baked. Line and oven tray with baking paper.

Place the flour, baking powder, salt and cayenne pepper in a large bowl. Rub the butter into the flour using your fingertips until it is all combined. Some small chunks of butter are fine. Stir through the cheese.

Whisk the egg with the milk and add to the flour mixture and mix until it forms a dough. Don’t over mix, add a splash more milk if too dry (but you don’t want a super wet gloopy dough).

Lightly flour the bench and tip the dough out. Roll into a rectangle about 1cm high. Spread the relish over the dough, top with the spinach and the feta and a little sprinkle of extra cheese.

Carefully fold the dough over to roll into a log. Cut into7-8 pieces.

Place on the tray, brush the top with egg yolk and sprinkle with remaining cheese.

Bake approx. 18-20 mins, or until golden and cooked.
