Made from Green wheat which is deliberately picked early then roasted. Then it is cracked into smaller pieces to look like bulghar. High in fibre with a distinctive roasted taste. Popular in Middle Eastern dishes and often used to make filling and stuffing for meat and poultry as well as an ingredient in soups.
